Ever since I got home from the hospital (back in November, eek!) we have been eating like crap. Between adjusting my body to my new meds, to the stress of moving, to the holidays, to house guests, to being sick... well, there have been a lot of things going on around here. Nutrition has been on the back burner! We've been eating out and eating junk way too much lately. I've barely been cooking at all. I was starting to get back on track with breakfast at least before I got sick, but even that has gone out the window. It's terrible.
Well, tomorrow is
Shrove Tuesday, also known as Mardi Gras or Fat Tuesday. Since I am Catholic, we observe the period of
Lent which will start on Wednesday. What better time to get back into a routine of healthy eating and give up all the eating out?
As part of eating better, I really want to get back to observing
Meatless Mondays. I'll never be a vegetarian because I love bacon and sausage and
carne asada and all that good stuff way too much. But one day a week? I think I can handle that.
I started a few days early, with this easy dinner. I know, eggs for dinner is kind of weird, but this was really good!
First, finely chop a shallot and saut
é it for a minute in a pat of butter. You could use some onion or scallions if you prefer.
Toss in a big handful of sliced mushrooms. I used six creminis. Sometimes they call them Baby Bellas in the grocery store. Cook them for a few minutes with the shallot.
If you don't stir them too often, they'll be able to get nice and browned which adds to the flavor.
Add half a bag of spinach, coarsely chopped.
Cook it for a few minutes, allowing it to wilt but not overcook.
Distribute the mixture evenly around the pan and pour in five scrambled eggs. Season with salt and freshly ground black pepper to taste.
When the eggs are almost set, sprinkle some shredded cheese over them. I used extra sharp cheddar this time, but Gruyère is good too.
I served the eggs with whole wheat tortillas. You could roll them as a burrito too. If you like quiche, you could follow the recipe up until the point you add the eggs. Put the cooked veggies into a pie crust, combine your seasoned eggs with a cup of cream and pour over the top, sprinkle with cheese, and bake until set.
This is really good, and really filling!

I just wanted to say thank you to all the people who left kind words on my last post. It really means a lot to me to know that people care. We took the suggestion of one of my readers (who is so amazing and strong) and we wrote letters to the baby on helium balloons then released them in the back yard. We had to make sure none of the freaky little airplanes were flying nearby first. :)

That's cool that you guys are getting back on track. It must feel good. There's something about this time of year (March to June) that I always seem to want to cook. This recipe looks really good! We eat a lot of eggs. We'll definitely try this one.
