I haven't done this in a while

I've been cupcaking.

These came out sooooo good! I had a bottle of Chocolate Cherry Diet Dr. Pepper in the fridge since FEBRUARY because I wanted to try it and then realized it had caffeine. Duh. So it's just been sitting in the back, taking up space, feeling all sad and forgotten. While I was rooting around in my cupboards, I came across a box of white cake mix. I normally bake from scratch, but I have this phenomenal recipe for a white sour cream almond cake that uses cake mix as a base, which is probably how it ended up in there. Anyway, I recalled that there was a way to make a cake using soda and cake mix, so I poked around on Cake Central and yup, there it was.

One box white cake mix and 12 oz of any soda.

Complicated, huh? I dumped them into a bowl, mixed them up with the FABULOUS pink glittery Le Creuset spatula that my mother in law gave me (I had been coveting Susan's lime green ones previously!) , scooped them into cupcake liners, and tossed them into the oven. It barely had time to preheat, it was that fast and easy to make the batter!

After they cooled, I whipped up some chocolate buttercream and added a mere eight drops of LorAnn cherry flavoring. Ordinarily, I tend to skip artificial flavorings and extracts in favor of the more expensive and higher quality ones, but honestly, how often are you going to use cherry flavoring? Where does one find real cherry extract anyway?

Besides, the little bottles were $1.25 at the cake decorating store, so I figured, what's the harm?

Holy crap, this is my new favorite frosting. It's thick and creamy and rich and chocolatey, without being over sugary. The cherry flavor adds a little extra kick, and it crusts just enough so that the piping on top holds it's shape.

I put a tiny pink candy thing on each one for decoration. I like to keep things simple.

When you make red velvet cake, do you ever include chocolate chips (like nothing bundt cake does)?

No, but I suppose I could. It wouldn't be hard. I haven't done red velvet in a while, since I can't eat the stupid red dye 40 right now. LAME.

Oh my those look yummy! I love cupcakes. :) I wish I could have just ONE. or two.
I had a craving for pumpkin pie this weekend - so that's what I made. I did it the cheater way and got the "mix". Turned out great though. :)

Those look so good!! I make a cake using either the strawberry or lemon cake mixes and a can of diet sprite. And then just some powdered sugar for the topping. MMMM good and low cal!!

Yum. They look so pretty. Who just doesn't love some buttercream frosting. Loved how you piped the frosting too.

Those are absolutely beautiful. I agree that there's something about a simple presentation. And the recipe sounds delicious! It's really cool that you do this. I bet your husband loves it.
