Zucchini Pizza

As I mentioned a few posts back, I'm totally addicted to Pinterest. I was telling my friend Sam about it and she made the comment that most people would just pin things, but I was the kind of person who would pin things then actually do them. I thought that was funny.

Here is the latest thing I've tried from there:

Grilled Zucchini Pizzas. I saw the photo on there and just ran with it. I looked up the source for the photos in order to reference it for this post (another bonus of Pinterest - I can keep track of where things come from and credit them!) and was pleased to see that I pretty much nailed the technique on my own.

First, slice up a zucchini. This was a perfect use for that giant zucchini I picked last week. I sliced it about 1/2 inch thick.

I also sliced up a ball of mozzarella.

I put them on the grill (no oil) and grilled them on one side. Okay, actually I had my husband do that. The grill kinda freaks me out.

When then had nice grill marks on one side, he flipped them over and I put a little pizza sauce on each one.

Next, I topped each one with a slice of mozzarella and a sprinkle of parmesan cheese. Sorry about the bad photos; it was getting dark outside.

Finally, I put a couple of slices of turkey pepperoni on top. I didn't think any of my fancy pizza toppings were going to work for this, so I went old school. Turkey pepperoni was purchased because I looked compared the nutrition information on those with the cute mini pepperoni (my original choice) and about died.

We closed the lid and left them on there until the cheese was melted and the bottoms began to char a bit.

Now, mine don't look like the ones in the source photo. They didn't brown on top at all! Maybe I should have taken them off the grill while I topped them, maybe I should have popped them under the broiler - who knows? What I do know is that they were good. Even zucchini hating husband ate them, although veggie hating son did not.

I will admit that, as delicious as they were, I have a hard time having a meal with no carbs. I feel full like I was inflated with air or water; more bloated than satisfied. Problem easily solved.

I put a couple of those on a plain bagel half and all was right with the world. Yum. :)
