I've been doing this
photo scavenger hunt of sorts, and one of the topics for which I needed a photograph was Grilling/Picnic. Seeing as how there are only a few days left in the month, I really needed to get on that! I present to you Dinner:
Marinated grilled chicken, grilled asparagus, and quinoa with squash and parmesan. Simple and mostly healthy. First, this afternoon I made up some marinade for the chicken.
In a Ziploc bag, I combined:
3 tablespoons fresh lime juice (about one large lime)
4 tablespoons olive oil
3 tablespoons soy sauce (I use low-sodium
tamari)
7 cloves garlic, pressed
2 tablespoons fresh cilantro, chopped fine
1/2 tsp kosher salt
1/2 tsp red pepper flakes
I smooshed that all together then tossed in some chicken and sealed it up. I left it in the fridge for somewhere between 3.5/4 hours and then had my husband grill it up for me. (propane scares me) I served it with grilled asparagus (toss spears with a couple tsp of olive oil, some salt, pepper, and garlic powder to taste and grill!) and quinoa.
Quinoa is fairly new to me. It looks a little strange, what with those weird little ring-shaped hulls it has when cooked, but it tastes pretty good. It's also a pretty
healthy choice as far as grains go. I cooked mine according to the package directions, substituting homemade chicken stock for the water. While that was cooking, I diced up a zucchini and a yellow squash. I sautéed those in a little bit of butter and olive oil with some salt, pepper, and garlic powder. I sure do love me some garlic! When the quinoa was done, I tossed it with the cooked squash and a handful of freshly grated Parmigiano Reggiano. It was pretty dang tasty!
So there you have it - one of the few, if not only, times I will give you a recipe for the grill.

What a lovely meal. That looks fabulous and sounds wonderful with all those delicious flavors. I agree, you can't go wrong with garlic. The way you prepared your quinoa sounds excellent. Will be trying that! (I like it in muffins or mixed with fresh cucumbers and seasoning, too.)

yum, sounds great! and the ground beef wellington as well! I was too lazy to do the photo scavenger hunt this time...next time maybe! But I will be going and checking out all the entries, cant wait to see what you all came up with photo wise!
