Kale Chips
In yesterday's post, I mentioned that I was going to try making kale chips today. I've been seeing mention of them all over the internet lately. They sounded easy, and every account claims that they're delicious, so I figured what the heck, right? It didn't hurt that Whole Foods has organic kale on sale for 99 cents a bunch right now either!
First, you take a bunch of kale.
Cut off the leaves (I didn't use the tough middle part of each leaf, just the frills), wash them off, and put them in a salad spinner to get them as dry as possible. It's easier to cut off the leaves with a pair of kitchen shears than it is with a knife.
Take a baking pan and line it with parchment paper.
Now, the directions I read said to toss the kale with a tablespoon of olive oil. I have this
handy little spritzer guy though, so I just laid the kale on the sheet and then gave it a fine misting with the olive oil. I bet I used a lot less than a tablespoon this way. Sprinkle with a little bit of kosher salt. Just a little! (I may or may not have over salted one section)
Bake in a 350 degree oven for about 12-15 minutes.
Mine were in there for about 13 minutes. The kale gets a little bit darker and shrinks a bit. It will get really crispy too. Some of the pieces that I left bigger didn't get crisp all the way, so it's probably a good idea to keep them in uniform, bite sized pieces.
I ate about 3/4 of this bunch of kale while I was making the tomato sauce for the pizza I was making for dinner. It's actually really good! I am not a big fan of the leafy greens. My involvement with them usually ends with spinach and the tamer varieties of lettuce. I will definitely be making this again because it was easy,
healthy, and it's great for when you're in the mood to mindlessly munch on something salty. Bubba even liked this, opting to eat the last of it instead of the pizza I served him for dinner. If that's not a glowing testimonial, well then, I don't know what is!

I am so totally going to make these! For sure. I like kale and have used it in a few recipes, but I've never really eaten it on it's own. I like the idea of your little olive oil squirter. Might look into getting one of those. Anyway, I'll let you know when I make these. Thank you for the tip!
hmmm... very interesting. I will have to try these. Don't know if I can get hubby to go for them, but maybe the baby!
